    Braised Puy Lentils

    Notes:
    Puy lentils are small, greenish brown, French lentils that can be found in specialty stores. You can substitute Beluga lentils if you can’t find puy. For even more flavor, add sautéed bacon to the final product. This dish goes well with so many things, including braised meats and grilled fish.

    Ingredients:
    2 heaping cups puy lentils
    1 whole head garlic, halved crosswise
    1/4 cup good-quality extra-virgin olive oil
    1 bay leaf
    1/4 cup red wine vinegar
    1 teaspoon salt
    4 tablespoons cold unsalted butter, chopped into small pieces

    Instructions:


    1. Place all ingredients except butter in a large saucepan with plenty of water to cover. Bring to a boil, reduce heat, and simmer for about 20 minutes or until soft. Drain all but 2 tablespoons of the liquid. Discard bay leaf and garlic. Whisk in butter and serve.
