Ingredients: 1 French Baguette
1 Zucchini
1 Summer Squash
8 Leaves of Mint
¼ cup of Chevre (Goat Cheese)
1 Tbsp Olive Oil
1 Tbsp Lemon Juice
Salt Pepper
Instructions:
Crostini
Slice the bread into ¼” slices
Place flat on a cookie sheet and lightly drizzle olive oil over them
Place in warm oven until slightly brown and crusty
Zucchini and Summer Squash Salad
Slice zucchini and summer squash as thin as possible
Marinate in lemon and olive oil for 30 seconds in a bowl to capture some flavor
Mix in the mint and the chevre
Season with salt and pepper to taste
Place zucchini and summer squash salad on top of the crostini
