    Fresh Zucchini and Feta Salad with Mizzuna
    [Recipe Serves 10-12]

    Ingredients:
    1 lb firm zucchini
    2 large handfuls of mizzuna
    6 oz feta
    Handful fresh mint, roughly chopped
    Red wine vinegar
    Extra virgin olive oil
    Salt and pepper.

    Instructions:
    The ingredients to this salad are easily adjustable to your taste and liking.

    Slice all of the zucchini into one-eighth inch disks and place them into a large mixing bowl.
    Season with salt and pepper and drizzle it with a little vinegar and olive oil. Continue to add seasonings until you find a flavor that you find satisfying. When you have found the desired seasoning, crumble in the feta, the chopped mint, mizzuna and lightly toss.

    Plate and serve.
