    Fresh Chargrilled Calamari with Chili Salsa

    Notes:
    Serve over fresh arugula or mustard greens.

    Ingredients:
    1 pound fresh calamari tentacles and bodies, well cleaned
    1/2 cup extra-virgin olive oil, divided
    Salt and pepper
    1/4 cup chopped fresh cayenne or Fresno chili pepper
    1/4 cup chopped fresh parsley
    Juice of 1 lemon

    Instructions:
    1. Prepare calamari by cutting each body piece lengthwise into one flat piece. In a large bowl, toss bodies and tentacles with one-third of the olive oil, plus salt and pepper.

    2. In a small bowl, mix together remaining olive oil, chili pepper, parsley, and lemon juice. Adjust seasoning with salt and pepper.

    3. Using a hot frying pan or grill, cook calamari pieces for about 2 minutes (about 1 minute on each side). Be careful not to overcook; if you do, the calamari will be tough and rubbery. Place grilled calamari on a plate and drizzle with chili salsa.
